The Rocksalt restaurant is located in Folkestone Harbour and is the first restaurant venture for executive chef Mark Sargeant, former head chef at Gordon Ramsay’s Claridge’s. The restaurant was the winner of the Commercial & Industrial award and the overall competition for the Kent Design and Development Awards Project of the Year. It is the first complete building to be realised as part of Sir Terry Farrell’s Folkestone masterplan. The restaurant is located on Folkestone’s harbour edge, adjacent to its working slipway where local fishermen unload their catch, delivering fresh fish to the restaurant daily. It is hoped that the project will catalyse the ‘Padstow effect’.
Key Features
- LED technology has been utilised for all public areas. Frameless adjustable downlighters to highlight architectural features and hidden strips to wash ceilings and down walls. All controlled by a lighting scene setting system.
- Air source heat pump system serving restaurant areas, with underfloor heating to reception and toilets spaces.
- Kitchen supply and extract systems incorporating smoke/odour filtration.
